Overview

Plant-based cheeses are made in a totally different manner than dairy cheeses, with a whole set of different ingredients. This gives them unique properties that may differ from what you may be used to with dairy cheese or even other brands of plant-based cheeses. Generally speaking, ours are going to be softer in texture due to their moisture content, but with a little know-how, can be used in any way your heart desires.

Melting

Our cheeses melt really well, but they do prefer a moist environment to a dry one. If, for instance, you were having trouble melting a slice on top of a burger in a skillet, popping a lid on top would trap moisture and speed up the process. Covering a baking dish in the oven (or something on a grill) with aluminum foil would do the same.

Freezing

With the exception of our mozzarella, your cheese will come wrapped in freezer paper, ready to go. If you don't have freezer paper, wrap the cheese in plastic wrap and put it in a freezer ziploc. Completely freezing the cheese will slightly alter its taste/texture. Ensure it's completely thawed before consuming to minimize this impact.

Shredding

To get the best results on a cheese shredder, it needs to be frozen. Shredding completely frozen works great, but a minimum of 45 minutes should be enough to firm the cheese. The colder the cheese, the finer you'll be able to shred it.

Slicing

For thin, uniform slices the cheese can be hand-cut with a knife, cheese planer, or wire. If you find the edge of your knife or planer isn't quite sharp enough/the cheese is too soft, pop it in the freezer for about 30 minutes to firm it up.

Cubing

To get the best cubes, the cheese should be at refrigerated temperature. If thawing from frozen, make sure the cheese is completely thawed before cutting.

Texture

If you want to firm up your cheese a little bit in the fridge, you can wrap it in a paper towel to draw some moisture out, just make sure to remove it after a day or so to prolong its shelf-life.

Shelf-Life

You can expect your cheese to stay good in the fridge for 2-3 weeks (the best by date on the package is dated 2 weeks after its mfg. date).
